Bran - his wolf Summer is with him (not likely to appear again until next season)
Rickon - his wolf Shaggydog is with him, he's with Osha and in the show's cannon is at last hearth. In the books he's at Skagos an Island in the north (very un-likely to appear this season)
Arya - her wolf Nymeria is wandering the Riverlands eating people.
Sansa - her wolf Lady is dead, after Arya's bit Joffery in the 2nd episode of the show.
Jon - his wolf Ghost is with him (just not shown on the screen)

Is Jon ultimately going to be the king of the 7 families? Just seems like the show always comes back to him and him becoming a leader/warrior.

It's the 7 kingdoms of Westros not families/houses. Westros is basically a continent the size of North America with 7 countries in the books. Though in the show it seems to be alot smaller given the distances people travel without a car/plane from episode to episode.
As for where the story's going well one can only speculate . The show this season is just weaving pieces of dialogue/combing characters and plots from the 4th/5th book (which run concurrently). It's not exactly faithful and Sansa/Jamie/Briene plot points at this stage in the books are alot more logical and Baristan Selmy ends up becoming a much more important character later on, however after this season finale they in theory will have caught of up with the books.
There's a 6th/penultimate book that'll probably be released next year called The Winds of Winter, but the show will probably not follow it. In otherwords we don't how it will have end, we just have a vague idea of where it's going in the books and that will probably be mostly changed for the TV show.

But right now Stannis feels he is the head of the 7 kingdoms and the queen feels the Lannisters are?

At the start of the show. Robert (Stannis's brother) is the king, he's married to Ceseri. They have kids Joffery, Mycella and Tommen (except they aren't... they're actually Cerseri/Jamie's kids and the result of incest, but Robert never finds out.) Robert dies and Ceseri uses the kids to keep her claim as Queen Regent/Mother along with the power. Currently Tommen is the king and he's married to Margaery Tyrell. The Tyrell's are the Lannisters biggest allies, but Cerseri is batshit crazy/paranoid and trying to cause trouble with them.
Stannis rebels since he'd be next in line, since Robert had no legitimate-non bastard children.
Robert was king in the first place, since years before the story the king was called Aery's Targaryen. Basically their was a rebellion and it's all very complicated. Aery's had 3 children Rhaegar (who Robert kills before the show started), Visery (who dies in the first season) and Daenerys who's got the pet Dragons. Daenery's is in Meeren, which is basically a city far, far away from Westros (7 Kingdoms) in another continent.

Danny could technically be the rightful ruler assuming she's the last living Targaryen from the bloodline.
Stannis is technically the rightful king assuming you think Robert was the rightful king in the first place.
Cerseri's children aren't, but they currently reign and have the bigger army currently.

Great update, thanks!!! So this will be a power struggle of Stannis vs Lannisters for some time. But the Starks to me have always been in the background abused and pushed around but about to pull a power play. I think Jon Snow will be that person. But what the hell do I know. Just seems like we are watching a coming of age regarding him.
