The show is the show, they've just combined Benjen's role with that of Coldhands. They've done this with a few characters from the book that they've cut from the show. They're two different characters, but Coldhands never showed up in the show.
I'm not even sure what you're referring to, when you said who helped Sam a few seasons back? In the books Coldhands escorts Sam, then Bran/Meera. This never happens in the show.
Their's no point in explaining who Coldhands may or may not be, since you haven't read the books and it likely only applies to the books. Also keep in mind this may be based upon the books, but George doesn't actually write for the show anymore.

That was 3 years before he wrote the first book (and decided 3 books wasn't enough). The first book was originally set to end with the red wedding when he envisioned a trilogy.
He had the idea for certain characters, but it evolved once he actually started writing about them. Alot of the ideas/concepts became very different things later on.

Several theories floating around that Dany is going to be the villain. I mentioned this earlier, but I believe it, at several points in the series I hated her, and her lust for the iron thrown trumps Joffery's and even Cersie's. And again, I don't see how her army survives a fight against the North with winter coming.
Brans vision shows wild fire exploding under the city, a dragon burning the city, season 2 had Dany in a vision of Kings Landing palace burned and the throne charred. Something is going down there at some point. Maybe its the end of the iron throne altogether. Jon fights for independence for the kingdoms and the north and it's clear Dany wants control of all seven kingdoms.

I see the show ending one of two ways. Either Dany vs Jon in a battle for Westeros or everyone vs White Walkers. If its the first scenario I can see Dany being the 'heel' to Jon. If it's the second scenario (and that's what I'm leaning towards) Dany and Jon will unite. I don't see any way of beating the Walkers without the dragons playing a part. A few valyrian swords and some dragon glass isn't enough.

Are they doing 7 or 8 seasons?
If there's going to be a happy ending I figure the Starks will come on top since they are the only "good house" out there.
I'd like to see them make both Dany and Jon villains. Perhaps a "traditional marriage" when they discover his true origins.
